Ivanhoe’s is currently serving their most popular sweet treat, Strawberry Shortcake, for the spring and summer months.
The owner of Ivanhoe’s, Carol Slain, is the one who developed the recipe for the shortcake. Today, the recipe remains a family secret.
“For as long as I’ve been here we’ve had strawberry shortcake, every year they seem to grow in numbers and become more popular,” said Mark Souers, general manager for Ivanhoe’s.
Souers has been employed in this role for nearly 30 years and does not know the recipe for the shortcakes.
The Strawberry Shortcake consists of strawberries piled over fresh baked, homemade shortcake, topped with whipped cream and soft-serve ice cream.
Slain bakes the shortcake from scratch throughout the week to be served to customers.
“She kept tweaking the recipe to get it to what it is,” Souers said. “Most people are always amazed at the consistency of the cake, and then it has that sweet crumb on top”
Souers estimates that they go through over 1,500 pounds of strawberries in order to make and serve between 500 and 600 shortcakes per week.
In order to meet the demand for more space, Ivanhoe’s converted the apartment building next door into their bakery.
Indiana Wesleyan University student, Alyssa Benson, said she enjoys getting strawberry shortcake during the spring season.
“Everyone was raving about it so I thought I would try it,” Benson said. “Now every time it’s strawberry shortcake season I get one.”
First time Strawberry Shortcake consumer, Elizabeth Armbrester, also enjoyed the homemade shortcake.
“Something I loved about the Strawberry Shortcake was the cake part,” said Armbrester. “It was so warm and very soft in the middle … it paired very well with the cold ice cream.”
Strawberry Shortcakes will be available throughout the summer until September 15.
